Recipe: Pumpkin Chiffon Pie
Step 1
3 beaten egg yolks
3/4 cup brown sugar
1 1/2 cups canned pumpkin
1/2 cup milk
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Step 2
1 envelope Knott’s clear gelatin
1/4 cup cold water
Step 3
3 stiffly beaten egg whites
1/4 cup granulated sugar
9 inch pie shell - graham or pastry (store bought works fine)
Step 1: Combine egg yolks, brown sugar, pumpkin, milk, salt and spices.
Cook in double boiler until thick (like pudding) stirring constantly. Take off heat.
Step 2: Dissolve gelatin in cold water and then stir into hot mixture. Chill until partly set (about 1/2 hour).
Step 3: Beat egg whites, add sugar and beat until stiff. Fold stiffly beaten egg whites into chilled gelatin mixture. Pour into pie shell and chill until set.
Garnish with whipped cream.

September Recipe:
3 sticks butter
1-1/2 cups sugar
1-1/2 cups brown sugar
3 eggs
1 tbsp. vanilla
3 cups flour
1 tbsp. baking powder
1 tbsp. baking soda
1 tsp. salt
1 tbsp. cinnamon
3 cups chocolate chips
3 cups oats
2 cups coconut
2 cups pecans
Cream butter and sugars. Add eggs and vanilla, beat. Add dry ingredients until blended. Stir in remaining ingredients. Bake at 350 degrees for 10-12 minutes.
